How to cook Vegetable Soup?

Ingredients:

  • Butter – 8g.
  • Milk – 4-5 tsp.
  • Maida – 4g.
  • Water -250ml.
  • Bay leaf – 1.
  • Finely chopped onion for garnish.
  • Vegetables of your choice. I have taken:
Carrot – 20g.
Onion – 20g
Tomato – 40g.
Cabbage – 10g.
Sweet potato- 20g.

Method:

  1. Melt the butter and fry the onions for garnish.
  2. Keep the fried onion aside.
  3. Sauté all the vegetables except tomato in the same butter for 3-5 mins.
  4. Add the tomato, water and the bay leaf and bring it to boil.
  5. Simmer and cover and cook for 30 min.
  6. Remove the bay leaf, sieve, mash and strain the soup.
  7. Reheat it.
  8. Blend the Maida and milk without any lumps and to the soup.
  9. Cook until thick and smooth.


Serve Hot, garnished with fried onions/leaves.
