How to cook Vegetable Soup?
- Butter – 8g.
- Milk – 4-5 tsp.
- Maida – 4g.
- Water -250ml.
- Bay leaf – 1.
- Finely chopped onion for garnish.
- Vegetables of your choice. I have taken:
Onion – 20g
Tomato – 40g.
Cabbage – 10g.
Sweet potato- 20g.
- Melt the butter and fry the onions for garnish.
- Keep the fried onion aside.
- Sauté all the vegetables except tomato in the same butter for 3-5 mins.
- Add the tomato, water and the bay leaf and bring it to boil.
- Simmer and cover and cook for 30 min.
- Remove the bay leaf, sieve, mash and strain the soup.
- Reheat it.
- Blend the Maida and milk without any lumps and to the soup.
- Cook until thick and smooth.
Serve Hot, garnished with fried onions/leaves.
