OIL FREE CHICKEN ROAST

Yes, you guys heard it right, its a guilt free and a tasty Kerala Chicken Roast recipe for today.

HOW TO MAKE CHICKEN ROAST WITHOUT OIL?

INGREDIENTS:

  • Coconut Milk - 1 Cup
  • Chicken - 750 g
  • Garam Masala - 1 Tbsp
  • Pepper Powder - 1 Tbsp
  • Ginger - 1 inch
  • Garlic - 7 cloves
  • Green Chili - 2 med size.
  • Small Onion/Shallots -  10 no
  • Turmeric powder - 1/2 tsp
  • Kashmiri Chili powder - 2 Tbsp
  • Lemon - 1
  • Salt - as per your taste.
  • Curry Leaves - 2 Spring

METHOD:

  1. Clean and cut the chicken into it pieces. Make small strokes in each piece for the masala to penetrate into the chicken. 
  2. Grind shallot, ginger and garlic (not finely).
  3. Marinate the chicken with this fresh paste made, one spring of curry leaves, lemon and the spices mentioned alongside salt. Let it sit for an hour or overnight.
  4. To a pan add the marinated chicken and coconut milk and cover cook it in low flame for 20 min. Do give it a stir occasionally.
  5. Now add the garam masala and the remaining curry leaves and mix well all really well.
  6. Cover and cook the chicken for another 5 min. You will notice the gravy has thickened and your roast is ready.

Do the whole process in low flame.
