GINGER CURRY
Make simple and easy ginger curry known for its digestion goodness along side some hot rice.

HOW TO MAKE GINGER CURRY?
INGREDIENTS:
- Ginger – 30g
- Green chili – 2
- Coconut – 30g
- Salt – as per your taste
- Coconut oil – 20 ml(preferably)
- Mustard seeds- ¼ tsp
- Whole red chilies – 2
- Fenugreek seeds– 1/8 tsp
- Tamarind – 10g
- Sugar – 5g
- Curry leaves – a spring.
METHOD:
- Peel and chop and the ginger finely.
- Soak them in hot water and keep it aside for 10min.
- Soak tamarind in lukewarm water for 10 min
- Chop the green chili. Chop the coconut into small pieces.
- Drain the ginger.
- To a pan add the green chilies, coconut and ginger and add little water and cook them till dry.
- Heat oil in a pan sputter the mustard seeds, add the fenugreek seeds, red chilies, curry leaves and the cooked ginger mixture and sauté till reddish brown in color in low flame.
- Squeeze the water out of the soaked tamarind.
- Now add the tamarind water, enough salt and a pinch of sugar and bring to boil.
- Simmer for 2 min.
- Remove from fire.
