TAMARIND RICE
A popular fiber rich and tasty South Indian Rice recipe, Tamarind Rice or known as Puliyodarai, Puliyogare or Kokum Rice

HOW TO MAKE TAMARIND RICE?
INGREDIENTS:
- Rice – 400g
- Red chilies- 20g
- Split black gram – 50g
- Split Bengal gram – 50g
- Tamarind – 50g
- Curry leaves- a spring
- Asafetida – 1 tsp
- Oil – 150g (preferably gingelly oil)
- Peppercorn – 4
- Green chilies – 2
- Ginger – a small piece
- Mustard – 1 tsp
- Turmeric – a pinch
METHOD:
- Wash and cook rice till 90% done.
- Rinse with cold water and keep it aside.
- Soak tamarind in 200ml of water and keep it aside for 20 min and extract juice out of it.
- Roast the Bengal gram, black gram and red chilies and grind to a powder.
- Chop green chilies and ginger and curry leaves.
- Heat oil and add asafetida, peppercorn, mustard seeds, turmeric, green chilies, ginger and curry leaves.
- Add the tamarind juice and powdered spices and salt and cook till all the water evaporates and mixture thickens.
- Mix this mixture with rice.
Serve hot and garnish with fried cashews/groundnuts.
