TAMARIND RICE

A popular fiber rich and tasty South Indian Rice recipe, Tamarind Rice or known as Puliyodarai, Puliyogare or Kokum Rice

HOW TO MAKE TAMARIND RICE?

INGREDIENTS:

  • Rice – 400g
  • Red chilies- 20g
  • Split black gram – 50g
  • Split Bengal gram – 50g
  • Tamarind – 50g
  • Curry leaves- a spring
  • Asafetida – 1 tsp
  • Oil – 150g (preferably gingelly oil)
  • Peppercorn – 4
  • Green chilies – 2
  • Ginger – a small piece
  • Mustard – 1 tsp
  • Turmeric – a pinch

METHOD:

  1. Wash and cook rice till 90% done.
  2. Rinse with cold water and keep it aside.
  3. Soak tamarind in 200ml of water and keep it aside for 20 min and extract juice out of it.
  4. Roast the Bengal gram, black gram and red chilies and grind to a powder.
  5. Chop green chilies and ginger and curry leaves.
  6. Heat oil and add asafetida, peppercorn, mustard seeds, turmeric, green chilies, ginger and curry leaves.
  7. Add the tamarind juice and powdered spices and salt and cook till all the water evaporates and mixture thickens.
  8. Mix this mixture with rice.

Serve hot and garnish with fried cashews/groundnuts.
